Soup’s On – Potato Cheddar

As promised earlier this week, we have a yummy soup recipe for you…Potato Cheddar Soup…YUM!

This soup is perfect to pair with the Apple Walnut Salad recipe we brought you on Tuesday. Feel free to add a dollop of sour cream or some crispy bacon crumbles.

Potato Cheddar Soup with Sour Cream and Green Onion

This rich creamy very satisfying soup will no doubt be a favorite once you try it!

Potato Cheddar Soup
(serves 4-6)

4 potatoes (or 4 cups of left over mashed potatoes)
1 cup chicken stock
1/2 cup heavy cream
1/2 cup half and half
3/4 – 1 lb grated extra sharp cheddar cheese
1/4-1/2 teaspoon garlic powder
salt and pepper to taste

Peel and chop potatoes and cook in enough salted water to cover the chopped potatoes until water is cooked out and potatoes are very soft. Add the chicken stock and mix in blender until completely smooth. Add cream and half and half and blend again until thoroughly blended and mixture is perfectly smooth. Pour back into the pan and heat through. Add grated cheddar cheese and stir until cheese is melted and fully incorporated into the soup. Taste and adjust seasoning with salt and pepper to taste. Serve in bowls and top with green onion, sour cream and/or bacon if you choose.
