Our chum Amanda sent this to us. She found the recipe on a site called Eatwell101.com. This pork roast is so simple and quick to make and it is really delicious. Serve it with your favorite potatoes and veggies or some seasoned rice and a salad and you’ve got a yummy dinner ready in a hurry. Since you roast the pork loin on a sheet pan, you can roast veggies alongside it and have a really easy dinner with an even easier clean up.

Bon appetit!

Pork Tenderloin In Balsamic Rosemary Sauce

3 lb. pork tenderloin
2 tablespoons olive oil
salt and pepper

Preheat oven to 450 degrees. Dry the roast with paper towels then season all over with salt and pepper. Heat oil in a heavy bottomed pan and nicely brown pork roast on all sides, this will take about 10-15 minutes. After the roast is browned, transfer the roast to a sheet pan and baste with half of the balsamic sauce. Roast in the hot oven for 15 minutes. Remove from the oven and allow the roast to sit for 5 minutes then cut into 1/2 inch slices and serve with remaining sauce on the side.

Balsamic Rosemary Sauce
1/4 cup olive oil
1/4 cup balsamic vinegar
8 cloves garlic
1/2 cup fresh rosemary leaves
1 teaspoon Italian seasoning
1/2 tablespoon Chicken Better Than Bouillon or 1/2 chicken bouillon cube
1 tablespoon honey
1 tablespoon Sriracha or your favorite hot sauce

Place all the sauce ingredients in a food processor or blender. Pulse until thoroughly blended and the sauce has a thick syrupy consistency. Store any left over sauce in a jar and refrigerate.
