Comfort Food – Pasta

For many, if not most of us, pasta falls into the category of a universally accepted comfort food. The one we are sharing today is both comforting and D.E.L.I.C.I.O.U.S!

We don’t know the origins of the name of this yummy delight. Camera in Italian translates roughly to “room” and what that has to do with this dish escapes us. But the delicious experience doesn’t. Try this one sooooon!!!!

Pasta Camera

1 lb. rigatoni (or your favorite shaped pasta- we use a gluten free pasta)
2 onions thinly sliced
2 chicken breasts cut into chunks
3 Italian sausages sauted and sliced
1 small jar sun dried tomatoes, about 1/4 cup chopped
1/2 cup crumbled feta cheese
1/2 cup pine nuts, optional
1/2 cup sherry
2 cups cream
salt and pepper to taste

Bring water to a boil and add 1 tablespoon salt and the rigatoni and cook as directed on the package.

While pasta is cooking, drizzle a bit of the olive oil from the sun dried tomatoes in a frying pan. (If your tomatoes are vacuum packed with no oil just use regular olive oil.) Place thinly sliced onions in the pan and sprinkle with salt and pepper. Saute the onions until they are nicely browned and caramelized. Remove from the pan and add sausages. (Do not rinse pan between ingredients. All the brown bits that collect will help to flavor the sauce) Cook sausages thoroughly on all sides. Remove and allow to cool then slice.

Add chicken and a bit more oil to the pan. Salt and pepper the chicken and saute until done and slightly browned. Add the onions and sausage back to the pan and add in the chopped sun dried tomatoes. Stir to combine. Add the sherry and cook for 3-5 minutes on medium high heat until the sherry is reduced to about half and all the brown bits on the pan are stirred into the sauce. Add the cream and stir together well. When thoroughly combined, add feta cheese and pine nuts and stir again.

Drain pasta and pour the sauce over the pasta and stir together. Sprinkle with chopped parsley or basil. Serve immediately. Comfort awaits!
