Yummy With A Twist

One of our chums took a recipe we posted a few weeks ago, and added to it.  We love it when that happens 🙂Our chum David, from Food Made of Lovetook our recipe for Oatmeal Apple Walnut Bars

oatmeal barsThere is still no sugar added, so these are the perfect slightly sweet treat for anyone who isn’t eating sugar this Thanksgiving or anytime for that matter….Thanks David !

Last year we put a twist on a recipe ourselves, using our Pumpkin Bread recipe we made them as muffins and added a butter cream cheese icing to our recipe and our lovely breakfast or teatime muffins becamePumpkin Cupcakes🙂

Oatmeal Banana Apple Pumpkin Nut Bars

Mash 3 ripe bananas
Add:
1 cup milk (regular or almond)
2 tsp vanilla
1 tsp pumpkin pie spice
1 tsp apple pie spice
1 tsp baking powder
1/2 tsp salt
Stir well
Add 1 15 oz can pumpkin puree (not pie filling)
Add 1/2 cup unsweetened applesauce
Stir well
Add 1/2 cup nuts (walnuts, pecans, sunflower seeds)
Add 2 diced apples (cored and peeled)
Add other dried fruit or cocunut (no more than 1/2 cup)
Mix well
Add 3 cups Old Fashioned Oatmeal
Mix Well

Line 13×9 cake and brownie baking pan (pyrex) with wax paper
Spray wax paper with spray oil

Put the bar ingredients in lined pan
Layer 2 sliced apples on top of mix, push into bar material slightly
Put in a preheated 350 degree oven

Bake for 30 minutes – you want the the bars to start to brown and pull away from the sides.  Cool completely. Cut into bars and enjoy.
