Let’s Get Corny


Well it’s summer and no matter what meal you are planning, it would probably be better with some corn.
Corn is a stable in nearly every major cuisine.  It is boiled, fried, baked, creamed and popped. There are a variety of colors and sizes.  There is polenta, and grits, masa and hominy.  It is served hot and cold.  Eaten on the cob and off.  Frozen and fresh.  But no matter how you serve it, everyone loves it.  So here are some fun facts and “corny” tips for enjoying those golden ears of summer:)

 

Use a clean toothbrush to remove stray threads of silk from freshly shucked ears of corn. The bristles will lift them away quickly and efficiently

Grill ears of corn to bring out more sweetness.  Cut corn cobs into 1 ” pieces, drizzle with butter and serve as an appetizer or finger food.

Farmers grow corn on every continent except Antarctica.

The tassel (silky strings at the tip) should be golden brown; a pale tassel is an indication that the corn was picked too early.

Using coconut oil to pop popcorn will give it a taste like the movie theatre popcorn.

Use a bundt pan to catch the kernels when you are cutting fresh corn off the cob.

One of our favorite corn products….freshly fried corn tortilla chips….yum!

So get to it and enjoy one of summer’s best gifts….corn!

      I find white tends to consistently be sweeter but Costco sells a brand that is yellow called GloriAnn that is delicious! Always sweet and fresh. If you happen to shop at Costco, check it out.
