Fall Fiesta

Summer is almost over, a new season is starting, and school is back in session!   As you know, your Two Chums firmly believe in celebrating the good and so what better time to do just that?   We are celebrating the wonderful time we have had all summer and all that the months ahead have in store.For us, a “Fall Fiesta”, with Randy’s San Antonio Fajitas, sounds like a grand way to celebrate but, whatever your family enjoys cooking and eating, go for it – pull out all the stops and celebrate!   You can include just your family or enlarge your tent and invite some of your neighbors.    Perhaps a new family has moved into your neighborhood and would love to be included in the festivities.  What a great way to get to know them.

If you have school aged children, it is a great way to mark the end of summer vacation and the beginning of exciting, new experiences in the fall.   Your children will learn the importance of celebration and the expectation of good….the expectation of love, joy and abundance in life!

 

 

 

Many years ago, Randy and I decided to move to San Antonio with our three girls.  My brother and his family had recent;y relocated there and with so much of my heritage being related to Texas, it just seemed like the right thing at that time.  We found a perfect house in San Antonio, made an offer and came straight home and put our house in California on the market.  Within days the Los angeles riots broke out and no one was looking to move our direction.  We lowered our asking price several times until finally Randy said, “We aren’t going to give this house away just so we can go to Texas.  Maybe God is telling us something.  We had one set of plans and He has another.”  So we took down our “For Sale ” sign and we’ve been here ever since.  But we made many trips to San Antonio and over the course of all those visits Randy learned to make Fajitas.  They originated there and he has perfected them so that we don’t have to travel to really good Tex-Mex fare anytime we want them.   Now you can have it too 🙂

To make Randy’s San Antonio Fajitas you will need the following:

4 pounds of skirt steak
1 bottle Lawry’s Teriyaki sauce (or your favorite teriyaki sauce)
Olive oil
Red, yellow and green peppers
2 onions, sliced
Lawry’s Seasoned Salt
Flour tortillas
shredded cheese
sour cream
guacamole  or avocado slices
Your favorite red or green salsa (We prefer Tabasco’s Chipotle Sauce)

Marinate the meat in teriyaki sauce for at least 4 hours or up to overnight…the longer the better.

Chop the peppers and onions and slowly saute in olive oil until the onions are lightly browned and the peppers are soft.  Sprinkle the meat with Lawry’s Seasoned Salt and grill for about 8 minutes on the first side and then flip it over and grill another 4-5 minutes on the second side.

Slice and then chop meat.  Mix with peppers and onions and broil until the meat is really hot and the chunks of meat on the top are browned, about 5 minutes.  Serve with flour tortillas, cheese, sour cream and guacamole.…ole!

    Oh, my personal tex mex favorite–just ordered them at a local joint while traveling thru Santa Rosa, NM night before last! Can’t wait to try out Randy’s recipe (and to see you chums real soon)!
