Easter Egg Casserole

IMG_2544Easter Brunch is always a fun way to celebrate the holiday with family and friends.  And we’ve got an easy and delicious dish that everyone will love.  It just happens to be gluten-free too!  This is perfect for your Easter brunch or buffet and is a recipe you will use over and over and over again…we certainly do 🙂

Potato Cheese Egg Bake
Serves 12-15 people.

1 bag of frozen hash browns, browned
1 1/2 lbs. sausage browned and crumbled
1 lb. of grated sharp cheddar cheese
12 eggs
2 cups of cream or half and half
1 bunch of green onions chopped
salt and pepper to taste
oil for browning the potatoes

Brown the potatoes in some oil and place in the bottom of a 9×13 baking dish.  Top with half of the cheese, then the sausage, and then the green onion.  Beat the eggs with some salt and pepper.  Add the cream and mix well.  Pour over the potato cheese mixture and top with remaining cheese.

Bake 350 degrees for about 45-50 minutes or until the top is bubbling and golden brown.

Serve with fruit, or a green salad made with fruit and nuts. Add some Homemade Cinnamon Rolls  or some Favorite Banana Muffins  and you are bound to have lots of love, joy and some very abundant eating this Easter 🙂
