What’s For Dinner? – Easy Ginger Beef


Want an easy and really tasty idea for dinner?  We’ve got that 🙂  This is yet another way to use a tri-tip roast and make a delicious dinner in a jiffy.  You can marinate the meat in the morning and cook it in about 45 minutes when you’re ready for dinner.  Or even marinate it overnight if you like.  Either way you’ll have a great roast.  Serve it with some fried rice or white rice, or some baked potatoes, and a salad with Asian salad dressing and you’re all set.  In less than an hour, dinner is served.

Easy Ginger Beef -GF
2-21/2 lb. tri-tip roast
2 tablespoons extra virgin olive oil
2 tablespoons gluten free soy sauce
2 cloves of minced garlic
1 large knuckle of fresh ginger, finely grated
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon garlic powder

Combine oil, soy sauce and seasoning and stir to make a sort of paste.  Rub all over the meat and allow to sit for 1 hour or up to overnight.  The meat needs to be out of the fridge for at least 1 hour before roasting.  If the meat is being seasoned more than two hours before cooking, keep it in the refrigerator but remove it at least 1 hour prior to cooking to allow it to come to room temp.

Roast the meat on a foil-lined baking sheet in a 450 degree over for 45 minutes for meat that is medium rare to medium.  Roast a bit longer if you prefer your meat more well done.  Remove the meat from the oven and allow it to rest for 10 minutes covered in foil before slicing and serving.  Always slice the meat against the grain (the grain is the direction that the long meat fibers run).  Spoon juices from the pan over the meat on the serving platter.
