Pasta Alfredo
(6-8 servings as a starter or side dish, 4-6 servings as a main course)

1 lb. gluten free pasta
1 stick butter
1 cup cream
1 cup half and half
3 egg yolks
1/2 teaspoon salt
1/8 teaspoon freshly grated nutmeg
6 oz. parmesan cheese, finely grated
Basil leaves for garnish

Cook pasta in boiling salted water according to package directions. While the pasta cooks, in a saucepan melt butter over medium heat.  Stir in cream to melted butter and add salt and nutmeg.  Whisk egg yolks into the half and half and add to cream mixture.  Heat over medium low flame just until it is heated through.  Stir in cheese and continue cooking and stirring constantly until cheese is melted.  Reduce the heat to a very low flame until the pasta is done and al dente.  Drain pasta and pour sauce over and stir to coat the pasta with the sauce.  Serve immediately garnishing with fresh basil if desired.  YUM!!!
