Turkey’s GF Friend

If you have been around Two Chums over the past year you know that we have been featuring Gluten Free (or GF) recipes. The day after tomorrow you, like thousands of other Americans, will no doubt head to the kitchen to have a sandwich made with some leftover turkey.

So today we are offering you the most simple recipe we’ve come across for gluten free bread that will be a great partner in your post Thanksgiving sandwich making endeavor.

And you could even make a loaf to serve with your turkey dinner or use this incredibly easy recipe to make dinner rolls instead of making a loaf of bread.

This tasty and very, very easy recipe came from a site called Alexandra’sKitchen.com Alexandra certainly knows a thing or two about good bread!

Gluten Free Peasant Bread

4 cups gluten free flour (we used Krusteaz GF All Purpose flour)
2 teaspoons kosher salt
2 1/4 teaspoons instant yeast
2 cups lukewarm water
2 T honey
2 eggs lightly beaten
2 T grapeseed or sunflower seed oil
1 teaspoon apple cider vinegar
butter for greasing the bowl

In a large bowl whisk together the flour, salt and yeast. In another bowl pour water over the honey to dissolve. Add the eggs, oil and vinegar. Add the wet ingredient to the dry and mix with a spatula to form a stiff batter.

Grease two 1 quart oven proof bowls or one 2 quart oven proof bowl with softened butter – be very generous with the butter.

Place the dough in the bowls or bowl and with wet hands smooth the surface of the dough. Let the dough rise in a warm draught free spot for 45 minutes.

Preheat the oven to 425 degrees. Place the bowl (bowls) in the preheated oven and cook for 15 minutes, then reduce the heat to 375 degrees and continue cooking for another 15-20 minutes until it is turning golden.* Remove from the oven and turn the bread out onto a cooling rack.

Allow the bread to cool for 20 minutes before slicing. Of course slathering a slice with some creamy butter is always a welcome treat.

* Gluten free bread has a tendency not to brown as wheat bread does. The top of the bread may not be very golden but the bottom should be. If you are able to use a clear glass bowl for cooking you will be able to see the bottom of the bread turning golden brown. If you smear some softened butter or brush some melted butter on the top of the bread before you bake it, it will help it to brown.
