Tasty Treats For Dad

Sunday is Father’s Day and we have a great idea for a treat everyone will love when you celebrate 🙂

Everyone loves a good sandwich and if that sandwich happens to have ice cream as the filling and chocolate brownies as the “bread”….well what’s not to love?

These ice cream sandwiches couldn’t be tastier and because they are so easy to make you’ll have more time to spend enjoying the man you will be celebrating on Sunday. Add to that the idea that you can customize these ice cream sandwiches to be just the flavor ice cream your father or husband likes, and you’ve got a winner of a dessert to please him and everyone else too! Maybe use your favorite Haagen Dazs flavor…you know all about that story from yesterday’s post.

Make your favorite brownies…a mix works just fine. Divide the batter into two equal pans and cook the brownies for approximately half the time you would normally cook them as the layer will be half as thick. When they are done turn them out of the pan to cool completely. Once cooled return one of the layers to the pan you baked them in but first line the pan with parchment paper to make them easy to remove when you are done. Next spread the brownie layer liberally with Dad’s favorite ice cream flavor. You could actually use two flavors one on either side of the brownie if you want more than one option. Top the ice cream with the second layer of brownie and wrap tightly with foil. Freeze the brownies and ice cream for 2-3 hours or overnight.

Just before serving remove from the pan using the edges of the parchment paper. Cut the brownies and ice cream into squares or rectangles depending on how large you wish them to be.

You can serve them as is or trim the edges to make them perfectly squared and even. You can cut them ahead of time and wrap them individually in waxed or parchment paper and return to the freezer until ready to serve.

This will be a fav for everyone but especially for that guy you are celebrating!
