Sweet and Green – Happy St. Pat’s Day


Tomorrow, as you are surely aware, is St. Patrick’s Day.  Whether you are technically Irish or not, it seems on March 17th EVERYONE is at least a little bit Irish.  We love to celebrate this fun holiday too and are always looking for fun ways to add to the traditional St. Patrick’s Day menu.  We came across these very moist and delicious cookies that, with just a couple of drops of green food coloring, are a perfect treat for your St. Patrick’s Day celebration.  The truth is, these are yummy and perfect any time.  They could hardly be any easier to make and we guarantee, no matter when you serve these (green or not), they will always be a hit!

Using cake mix is not something we typically do, preferring to make things from scratch.  But we decided to give these a try and we are so glad we did!  We will be making these often.

Rich Butter Crinkle Cookies

1 pkg. yellow cake mix
6 tablespoons melted butter
2 eggs
Food coloring (if using)
Mint extract (this is optional if you like a mint flavor, but these have a wonderful butter/vanilla flavor without any additional flavoring )
1 cup powdered sugar
1 teaspoon corn starch

Preheat the oven to 375 degrees.  Mix together the powdered sugar and corn starch and set aside.

Melt the butter and allow it to cool. In the bowl of a mixer, combine cake mix, butter and eggs.  Stir together and add food coloring a few drops at a time until the color you want is reached.

Using your hands, roll tablespoon size pieces of dough into balls and then roll balls in powdered sugar mixture until fully covered.  Place on a cookie sheet 2-3″ apart.  Bake for 8 minutes or until crinkled on the surface.  Allow to cool on the cookie sheet then remove to finish cooling completely.

These cookies are super moist and will keep well for several days and still taste fresh and delicious….but they probably won’t last that long once you’ve tasted them 🙂
