Soup’s On

Soup weather is fast approaching. Fall is officially coming on Monday, September 23.

As Fall sets in and the days grow cooler, soup becomes a staple for many of us. The soup we offer to you today is simple but very satisfying. We think you and your family will enjoy a bowl of this as a tasty meal very soon.

This soup is similar to the classic minestrone but without pasta so this soup is naturally gluten free. And with the addition of Italian sausage and cooked chicken there is lots of protein and added flavor. This is more of a method with a list of suggested ingredients than it is a recipe as you can add as much or as little of any ingredient suggested as suits you. And make as little or as much of the soup as you want. We suggest you make extra though, as this soup is particularly good left over. Enjoy 🙂

Italian Chicken and Sausage Soup
Chicken stock
Cooked chicken
Italian sausage
Carrots
Celery
Onion
Sun dried tomatoes
Italian seasoning
Olive oil
Parmesan cheese
Fresh basil for garnish

To chicken stock add cooked chicken (left over rotisserie or roasted chicken works well), Italian sausage cooked and sliced (be sure your sausage is gluten free if that is a concern), sliced carrots, chopped celery and onion, and sun dried tomatoes. Add some Italian seasoning and then drizzle in a bit of good olive oil. Simmer for at least 30 minutes to allow flavors to mingle and vegetables to cook. To serve top with parmesan cheese and a sprig of fresh basil. Add some good crusty (gluten free) bread on the side and dinner is served!
