PB&C Treats

In case you aren’t familiar with the shorthand of PB&C, that would be Peanut Butter & Chocolate!

Anything with peanut butter and chocolate is an instant hit with adults and children alike. And it is a welcome flavor combination anytime. Halloween may be over, but chances are your sweet tooth is still looking to be satisfied, if not today one day very soon. And these could be a perfect way to make you and everyone around you very happy. They are a great after school treat, a perfect sweet treat for watching football, and because they travel so well, they are wonderful to take along to a potluck or to wrap up as a hostess gift. If you use a gluten free rice cereal these can be gluten free as well.

You might want to cut them small because chances are you won’t be able to stop at just one! Happy Fall snacking 🙂

These are a variation on the very popular Rice Krispie Treats (Rice Krispies are NOT gluten free so substitute a gluten free rice cereal to create a gluten free treat)

Peanut Butter and Chocolate Treats

Rice Cereal Marshmallow Layer:
10 tablespoons of butter
2 bags of mini marshmallows (10 oz each)
1 cup peanut butter
1/2 teaspoon salt
12 oz. krispie rice cereal (gluten free if possible)

Peanut Butter Layer:
2 cups peanut butter
1 stick of softened butter
2 cup powdered sugar
2 tsp. vanilla
2 tablespoons milk
Pinch of salt

Chocolate Layer:
1 stuck of butter
1/4 cup of cocoa powder
6 tablespoons of milk
1 lb. powdered sugar, sifted
1 teaspoon vanilla

Butter a baking sheet or jelly roll pan and set aside. In a large pot melt the butter then add the marshmallows, peanut butter and salt and stir over medium heat until the whole mixture is melted.

Turn of heat and stir in the rice cereal. Stir to combine and coat all the cereal with the peanut butter marshmallow mixture. Turn onto baking sheet and press to create an even layer.

To make the peanut butter layer:
In another large bowl beat the peanut butter and butter together until smooth. Add the powdered sugar, vanilla, milk and salt and beat until smooth and fluffy. Spread the peanut butter mixture in an even layer over the rice cereal mixture.

To make the chocolate layer:
Boil together the butter, milk and cocoa powder. Pour that mixture over the powdered sugar and add vanilla. Stir to fully combine. This mixture will be thin at first but will set up like a layer of fudge.

Pour the chocolate layer on top of the peanut butter layer in the middle of the pan and using a knife or off set spatula, spread to the edges of the pan, then refrigerate for 15-30 minutes. Dust with powdered sugar and cut into squares.

Now let the fun and yumminess begin!!!
