On The Side – Twice Baked Potatoes

As the week begins we have an idea for you to make any meal seem more special.  You can serve these yummy and easy potatoes with any simple piece of chicken or fish, or meat.  Or really embellish them, and for a lighter meal, serve them as your main course.

This is more of a method than an actual recipe.  Maybe even more of an encouragement to be creative and experiment a little.  These tasty potatoes can make any meal more enjoyable.  Give them a try one night this week 🙂

 

 

 

Twice Baked Potatoes

Baked potato
butter
sour cream
grated cheese – cheddar, fontina, parmesan, swiss or pepper jack
chopped shallot or red onion or green onion
garlic salt
pepper
2 strips of bacon, fried and crumbled
Italian seasoning or French Herbs de Provence

Wash and dry a baking potato, one potato is enough for 2 servings.  Rub the potato skin with softened butter or olive oil.  Sprinkle all over with sea salt.  Bake for 1 hour in a 400 degree oven.

When the potato is done, remove from the oven and allow to cool just enough to be able to hold the potato.  Cut the potato in half and scoop out enough of the inside of the potato flesh to be able to leave the skin intact.  Place the scooped out potato in a bowl and add in 1-2 tablespoons of butter and 1-2 tablespoons of sour cream for each potato.  Next add some garlic salt, and some ground pepper, and chopped onion and mix together.  Add in bacon crumbles. Lastly stir in whichever kind of cheese or combination of cheeses that you prefer, about 1/2 cup of cheese for each potato plus a bit extra to sprinkle on top.

After you have combined all the ingredients together place the mashed potato mixture back in the potato skins and add a sprinkle of cheese and top with Italian seasoning or the Herbs de Provence.  Place potatoes back in the oven and bake a second time for about 15 – 20 minutes or until the cheese is fully melted, bubbly and lightly browned.

Try different combinations of herbs and cheeses.  Perhaps try some cream cheese in place of the sour cream, or sauté some onion and garlic and add that to the potatoes.  Or maybe try some browned sausage, either breakfast or Italian sausage in place of the bacon.  Whatever you mix into your potato, bake it a second time and….Enjoy!
