Muffins That Taste Like Donuts -GF

Yes you read that right.  Todays post is a recipe for donuts that actually taste like old fashioned cinnamon crumb donuts and believe it or not, that is the name this recipe was given in the book where we found it.  Now why wouldn’t you want to sweeten up the weekend with these yummy treats?  This recipe came from a very old cookbook that happens to be recipes just for muffins.  Having tried most of them, this recipe is the one we make again and again and again because EVERYONE always loves these muffins.  We have modified the recipe to make these gluten free for those who need it.  They are easy to make.  So simple a child (or maybe two) can make them. But don’t look away…trust us….they won’t be around long.  Enjoy!

 

 

 

Muffins That Taste Like Donuts _ GF

1 3/4 cups all purpose flour (we used Krusteaz Gluten Free All Purpose Flour, to keep these gluten free)
1 1/2 baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
1/3 cup oil or melted butter
3/4 cup sugar
1 egg
3/4 milk

Topping
1/2 cup (1 stick) melted butter
3/4 cup sugar
1 tablespoon cinnamon

Preheat oven to 350 degrees

Mix together flour, baking powder, salt, nutmeg and cinnamon.

In another bowl mix together oil, egg, sugar and milk.

Add the wet ingredients to the dry and stir just until combined.  Spray muffin pan with baking spray, or brush with oil or melted butter.  Spoon mixture into muffin pans.  We prefer the mini muffin pans but you can use standard pans as well. Bake for 12-15 minutes for mini muffins and 20-25 minutes for standard size muffins.

While the muffins are baking mix the cinnamon and sugar together in a bowl.  In another bowl, place the melted butter.

Remove the muffins from the oven.  If you are using gluten free flour remember that baked goods made with gluten free flour do not brown as they do with wheat flour, so you cannot use color to determine doneness.  Test the tops of the muffins by lightly pressing with your finger.  If there is some give, the muffins need another couple of minutes.  If they bounce bake, they are done. When they are cool enough to handle, dip the muffin tops in the melted butter, then immediately dip in the cinnamon sugar until well coated.  Place on a serving tray to cool.  These muffins should really be named Magic Muffins….now watch the magic….they will disappear before your eyes 🙂

Don’t forget these muffins are “child made”,  “child tested” and definitely “child approved”!
