Grilled Veggie And Shrimp Salad

This salad, or a version of it, is served at one of the most popular restaurants on Los Angeles, The Ivy.  Often seen in magazines because it is favorite celeb hangout, the restaurant is always packed! That wouldn’t be our reason for liking this Los Angeles hotspot, but the beautiful decor and the yummy food is always a good reason for a visit to The Ivy.

The Grilled Chopped Salad has been a favorite there since 1983 for good reason.  They offer it with a choice of grilled chicken or grilled shrimp.  Both are delicious.

This would be a perfect Mother’s Day lunch.  And if you live in the Los Angeles area or plan to visit with your mother, a handmade gift certificate good for a meal at The Ivy would make a lovely treat and Mother’s Day gift for your mother, grandmother, or wife.

Here is our version of this tasty salad:

Grilled Vegetable Salad

Salad greens
Asparagus
Radishes
Tomatoes
Green onions
Zucchini
Corn, still on the cob
Avocado
Either on an outdoor grill or in a grill pan on top of your stove, grill the asparagus, green onion, zucchini and corn.  While that is grilling roughly chop your lettuce and add cherry tomatoes sliced in half and thinly sliced radishes.  When the vegetables are well grilled, remove and chop in bite sized pieces.  Remove corn kernels from the cob.  Add grilled vegetables to salad along with slices of avocado.  Toss with dressing and serve immediately.

Dressing
1/2 cup freshly squeezed lime juice
1/3 cup honey
1 cup sunflower seed oil
1 teaspoon sea salt
1/2 teaspoon black pepper
1 tablespoon fresh dill leaves chopped

Blend all the ingredients in a blender.

Fresh salad and some nice bread and you are all set for a delicious and happy meal.  Oh and don’t forget to add some roses to your table as they always do at The Ivy.  Fresh flowers make any meal or celebration happier and brighter.

No matter how or where you celebrate, here’s to all the women who mother us or give us the chance to mother them!
