Good Again

Something we found interesting came to our attention this week. While we are all hunkered down at home during the current pandemic, people are in their kitchens and cooking more than ever. It turns out they are turning to the internet for recipes. And can you guess what the #1 recipe searched for on the internet is?……..banana bread!

It also turns out that one of the most searched for recipes on Two Chums is our recipe for Favorite Banana Muffins. Banana Muffins are really just little banana breads. And these can easily be made gluten free if you prefer. So we figured if it was good before, sharing it now with our old chums, and our new ones, would certainly be good again. So, here it is:

Favorite Banana Muffins

3 ripe bananas
3/4 cup sugar
1 egg
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups flour *(see note below)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/3 cup melted butter or  coconut oil or sunflower oil

Lightly mash bananas.  Add sugar and continue mashing.

Add slightly beaten egg.  Then add melted butter or oil.  Stir to blend.

Mix together flour, baking soda, baking powder, cinnamon and nutmeg.  Add flour mixture to  mashed bananas and stir to combine.

Fill muffin tins with batter.

Bake in a 375 degree oven for about 10 minutes for mini muffins, 20 minutes for normal muffins, and 25-30 minutes for extra-large muffins.  For the larger muffins check for doneness with a toothpick inserted in the center of a muffin.  Remove muffins from oven when toothpick is clean.  Be careful not to over bake the muffins.

If you like, sprinkle muffins with powdered sugar, or serve with cream cheese whipped with a little honey and a splash of vanilla. Now, let the weekend begin!

*For gluten free muffins, simply replace wheat flour with your favorite all purpose gluten free flour. Our favorite all purpose gluten free flour is made by Krusteaz.

And, while you are at it, add a candle to your muffins and sing “Happy Birthday” to Robin tomorrow. Yes, we celebrate her all of the time, for sure, but especially tomorrow on her birthday.

Robin is an amazing lady and I feel honored to have been able to walk beside her for many, many years. We started with a little shop called Chums where, “you could find all you needed for giving” and here we are now with Two Chums where we laud “the importance of forgiving”, amongst other things.
