GF Graham Crackers

One of the things anyone who is eating gluten free finds, is that it is sometimes difficult still, to find some everyday items that those who are not gluten free take for granted.  One of those items is graham crackers.  Even when you can find gluten free graham crackers, they are usually so expensive you will think twice about buying them, or at least you won’t buy them as often as you would the classic Nabisco Honey Grahams.  Today we have a recipe for a very simple, gluten free version of this favorite snack.  Give these a try even if you aren’t eating gluten free.  They are simple to make and child approved and enjoyed.  Let us know what you think 🙂

 

 

Technically these are not graham crackers since they do not contain graham flour which is a gluten product.  But these are a really good substitute!   Grab a cold glass of milk, or a nice cup of tea and enjoy these tasty little treats.

Gluten Free Graham Crackers

3/4 cup of almond flour
1/2 cup tapioca starch or potato starch
1 tablespoon coconut flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup ghee, melted
3 tablespoons honey
1 tablespoon molasses

Stir together the almond flour, tapioca starch, coconut flour, baking soda and salt.  Melt the ghee, and stir together with honey and molasses. Make a well in the center of the flour mixture and stir in the wet ingredients.  Mix until well combined.

Turn out on a piece of parchment paper.  Using your hands roughly form into a rectangle.  Place another piece of parchment paper on top of the dough and roll out the dough to a larger rectangle about 1/8 inch thick.  Cut the dough down the center lengthwise.  Next cut the other direction forming 10 smaller rectangles.  Mark the half of each rectangle to form squares and prick these twice with a fork.

Bake in a preheated 350 degree oven for 10 minutes or up to 12 minutes until the edges are starting to brown.  Recut on the cutting lines of the crackers.

Allow to cool and then separate and enjoy!  Try spreading the crackers with a little butter or peanut butter or almond butter for a really nice snack.
