Dipping Delights

Ice cream bars, especially those you make yourself, are a delight indeed!

Summer is the perfect time to make ice cream bars at home, just the way you like them. You can buy ice cream bar molds at most stores with kitchen equipment (the ones we used came from Marshalls), or on line, like these at Amazon.

Make some ice cream, or soften some you’ve bought at the market and fill the molds. Place the tops on the molds and let them freeze for several hours or overnight. Make the dipping sauce and get your favorite topping, crushed toffee, chopped nuts, sprinkles, crushed peppermints or broken pieces of your favorite candy.

Untold the ice cream bar and dip it in the chocolate sauce, then immediately roll it in the topping. Place the ice cream bar on some foil, or a small dish, and put back in the freezer while you top the other bars.

Chocolate Dipping Sauce:
2 cups of dark, milk, or semi sweet chocolate chips
2 Tablespoons coconut oil
Melt chocolate and coconut oil over a double boiler or very low flame. Alternatively you can melt chocolate and coconut oil in the microwave oven. Start with 30 seconds and repeat until chocolate/oil mixture is melted. Pour it into a jar just wide enough to accommodate the width of the ice cream bar and tall enough as well. Allow the chocolate sauce to cool slightly so it is still liquid but only slightly warm so as not to melt the ice cream. As you dip the ice cream in the chocolate it will form a soft shell, so roll it in the topping right away as it will begin to harden immediately.

Summer can be soon delicious…Ice cream bars are a summer delight!

She is my sweet granddaughter, Evangeline Love, and she is entering double digits today turning 10 years old. Her name suits her just right. Evangeline means “God’s messenger” and Love, well that speaks for itself in its meaning. She is just that to everyone, “God’s messenger of love” and on top of it she is smart, kind, caring, and loyal. I couldn’t be more proud of her. Happy birthday sweet girl!
