Dip In

Who doesn’t love a yummy dip?

This was quite honestly a surprise…a tasty happy surprise. We came across this on social media from a darling Mexican cook, though this recipe is not necessarily Mexican but really more Mediterranean…ish. No matter where it originates, it is yummy and was a family hit for us and we think it will be for you too. Serve it with toasted pita bread or your favorite crackers. If you happen to be gluten free you’re in luck as this dip is gluten free so if you serve it with a gluten free cracker, you are all set. Give it a try and let us know what you think 🙂

Avocado Goat Cheese Bacon Dip

1 large avocado, mashed
10 ounces goat cheese
1 tablespoon finely minced shallot (or sweet red onion)
1/2 lb bacon cooked and crumbled
1 jalapeño, finely chopped (use more or less to taste)
1 tablespoon lemon juice
garlic salt to taste
Toasted sesame oil

Mash the avocado. Add the remaining ingredients and stir until creamy. Add garlic salt to taste and drizzle with about a tablespoon of sesame oil, then serve…or should we say “Dip In”!
