Sometimes nothing but a crunchy, salty, snack is the only thing that will satisfy you…especially with a cold drink or a nice glass of wine.  But maybe you’re tired of potato chips or peanuts….OK nobody ever really gets tired of potato chips…Lays made a fortune on their ad campaign based around “Nobody can eat just one!” Still since variety is the “spice of life” and Two Chums is all about abundant living, I thought we could share a variation on a really nice snack we came across in Bon Appetit a while back.  Whether you call them chick peas, garbanzo beans or cece, when you try a handful of this salty, crunchy delightful treat made with the world’s favorite legume, you’ll have to have a second handful because “Nobody can eat just one!”

Crunchy Chickpeas

2 cans (15oz. each) chickpeas, rinsed and dried
5 slices uncooked bacon chopped into little pieces
2 bay leaves
Sprinkling of Lawry’s Seasoning salt and black pepper
1-2 teaspoons of Old Bay Seasoning

Toss the chickpeas with the bacon, bay leaves and salt and pepper.  Roast in a 375 degree oven for 1 hour to 1 hour and 15 minutes until chickpeas are crunchy.  Toss with old Bay seasoning (start with one teaspoon and add more to taste),  Cool and serve with something cool to drink….crunchy, salty…perfect!
