Chocolatey Goodness – GF

If you are not a fan of rich, creamy, chocolatey goodness the just happens to be no-bake and gluten free too, stop reading right now!  This dessert is simple to make and so good.  The fact that it is no bake AND gluten free makes it a keeper in our books. It doesn’t actually have a real name so we are just calling it what it tastes like….Chocolatey Goodness.  Give this one a try and let us know what you think 🙂

 

 

 

Chocolatey Goodness

Layer 1:

2 cups of gluten free chocolate cookie crumbs (you can also use any left over gluten free chocolate brownies…if they are a bit dried out and stale, all the better)
1 stick of butter, melted
1/4 – 1/2 cup sugar (the amount depends on how sweet the cookies are that you make into crumbs)

Stir cookie crumbs and sugar together.  Add melted butter and mix together then press mixture into the bottom of a 9″ springform pan.  Refrigerate for 15 minutes.

 

Layer 2:

2 cups of heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla
12 oz chocolate chips, melted

Beat cream, powdered sugar and vanilla into stiff peaks.  Melt chocolate chips and cool for about 3-5 minutes.  Fold melted chocolate into the whipped cream just until mixed and smooth.  Spread evenly over the first layer and refrigerate for 30 minutes.

Layer 3:

1 stick of butter
6 tablespoons of milk
1/4 cup cocoa powder
1 lb. powdered sugar

Melt butter and add milk and cocoa powder and cook over medium flame for 1-2 minutes stirring constantly.  Place powdered sugar in a bowl and pour cocoa mixture over sugar.  Stir quickly with a whisk until smooth.  Cool slightly and then pour mixture over Layer 2.  Refrigerate for 1 hour or overnight.

Layer 4:

2 cups of heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla
Cocoa powder

Whip cream with powdered sugar and vanilla.  Spread over Layer 3.  Sprinkle with cocoa powder and then using a knife, spread cocoa powder over the whipped cream creating swirls.

Refrigerate until ready to serve.  Remove from refrigerator, remove springform side and allow the “cake” to sit at room temperature for 10-15 minutes before slicing.  Make some coffee….you’re going to want some to go with this rich chocolatey goodness!
