BBQ Chicken Salad

Good for lunch or supper this versatile salad is a simple fix that is filling and satisfying and ever so tasty.

While the days…and nights…are still very warm, this salad is easy to make without ever turning on your oven. You can have a delicious lunch or dinner ready in minutes and still keep your kitchen cool. And you can easily customize it by adding the things that you or your family likes best. BBQ Chicken Salad

Chopped Romaine lettuce
Rotisserie chicken, or left over roasted or fried chicken*
Sliced red onion
Diced tomatoes
Sliced cucumber
These are the basics of the salad. Now the fun begins as you add any or all of the following ingredients to create your new favorite salad. Those possible add ons include:
Bacon crumbles
Shredded cheese (cheddar, jack, or mozzarella)
Black olives
Pickled jalapenos
Diced sweet mini peppers
Avocado
Raisins
Frozen corn
Black beans
Raw or roasted, almonds or pepitas
Crumbled tortilla chips

These are just some suggestions but you can add all or none of these or add anything else that you fancy.

Start by tossing all the ingredients you plan to use. Next drizzle with your favorite BBQ sauce. (The brand we use is KC Masterpiece, but you can use which ever one you like best) Use slightly less than you might think you need as you can always add more and too much will result in a soggy salad and no one likes that. Next mix in slightly less ranch dressing than the BBQ sauce you used. Toss all of this together and taste. You can add more BBQ sauce or ranch dressing as needed.

Serve immediately with a sliced baguette and butter, or if you’re feeling adventuresome, make some delicious cornbread to serve with your salad. Enjoy your summer supper 🙂

*If you don’t have chicken or prefer not to use it, you can substitute sliced turkey cut into strips and tossed in the salad in place of chicken.
