Happy Valentines Day dear chums,

As you read through this recipe it may seem odd that there is no sugar in the base or topping pastry. But trust us, the almond extract in the dough and the icing you drizzle on top make this really tasty and plenty sweet.

Almond Kringle
Pastry base:
1 cup all purpose flour (we used Cup 4 Cup gluten free all purpose flour)
1 stick of butter
1 tablespoon water (omit is using gluten free flour)

Pastry top:
1 cup water
1 stick butter
1 cup flour (or gluten free flour)
3 eggs
1 teaspoon almond extract

Icing:
1 cup powdered sugar
1/2 teaspoon almond extract
1 1/2 tablespoons milk
Slivered Almonds for garnich

Preheat oven to 350 degrees.

Using a pastry blender of a food processor, mix butter with flour then add in water to form dough for pastry base. Press dough out on a parchment lined baking sheet. We pressed the dough out into a heart because it is for Valentines Day but traditionally it would be in a ring shape or in two long oblong ovals. Place pastry base in the refrigerator while you make the pastry top.

Melt butter in a saucepan and add 1 cup of water. Bring to a boil. Immediately remove from heat and stir in 1 cup of flour. Mixture will be thick and pasty. Add eggs one at time stirring well after adding each one. The mixture will resemble mashed potatoes.

Spread this topping over the pastry base and bake for 50-55 minutes until pastry is golden brown.

Remove from the oven and allow it to cool. The topping will settle slightly and form a sort of custard like texture.

Drizzle with icing and top with slivered almonds.

Now get some coffee or a cup of tea and have a very sweet and delicious start to Valentines Day, or any day you choose to make this yummy treat!
