A Great Combo-Ginger and Chicken

It’s a new year and if you are like many people, you are cooking and eating at home more than ever. Are you running out of ideas for simple tasty meals? We tried something new yesterday. It was simple, easy to prepare, and down right delicious. In short, with kids and adults alike it was a hit. Using gluten free soy sauce it was perfect for everyone in the family. We served it with Fried Rice and garlic green beans. Give this a try soon. We’re very sure you’ll be very glad you did 🙂

Ginger Chicken

The secret to having this dish ready in minutes is in the prep. Have everything chopped and the other ingredients measured and ready to go.

2 tablespoons grapeseed oil (or any oil good for high heat cooking)
3-4 chicken breasts, cored or cut into small slices
salt and pepper to taste
4 cloves of garlic, crushed and finely chopped
2 tablespoons grated or very finely minced ginger
1/4 cup honey
1/2 cup gluten free soy sauce
2 tablespoons toasted sesame oil
1/4 cup freshly squeezed lime juice
1 tablespoon cornstarch

Use a wok if you have one or else use a large frying pan. Add oil and heat over a medium high heat, then add in chicken, salt and pepper, and stir until the chicken is no longer pink and just cooked through, about 3-4 minutes…don’t overcook . Add garlic and ginger and sesame oil to the pan and stir for about 2 minutes.

Mix lime juice and cornstarch together. Stir the GF soy sauce and honey into the chicken and mix well, then add the lime juice/cornstarch mixture. Continue cooking for about 3 minutes until sauce begins to thicken and chicken is completely coated with the sauce. Serve immediately or place in a bowl and keep warm in a 250 degree oven while you make the rice. This is really yummy….enjoy!
