A Creative Breakfast

This is a simple breakfast but a really yummy one that ANYONE can make and everyone should try.

Nearly everyone has heard the buzz about avocado toast which is basically your favorite bread that has been toasted and then spread with smashed avocado. We want to kick that idea up a notch.

One of the best things about avocado toast is how easy it is to make and how filling and satisfying it is. This version is satisfying in many ways because it not only satisfies your hunger but it gets your creative juices going as well.

This isn’t really a recipe, it’s a method with options to allow you to try different tastes and to make the finished product your own.

Start by toasting your favorite bread whether white, whole grain, rye, or gluten free. Next smear the warm bread with cream cheese, or goat cheese. Then slice or lightly mash 1/2 of a ripe avocado and add that on top of the cheese. Now add a soft boiled egg* that has been halved and then quartered. Sprinkle the adorned toast with salt and pepper.

Now the fun and creativity begins. Sprinkle with your choice of herbs either fresh or dried. Some suggestions include dill, tarragon, cilantro, cumin or thyme.

Next drizzle the whole toast with any topping that suits you. Some suggestions for this would be honey, olive oil, sriracha, salsa, dijonnaise, toasted sesame oil, and balsamic vinegar to name just a few.

You can see what we mean about this being a creative breakfast…easy and yummy and with so many variations in flavor, you can hardly get bored. Get that toaster plugged in, start peeling the avocado, and boil yourself an egg. And remember to have fun doing it 🙂

Soft Boiled Egg
*Place the uncooked egg in enough water to cover it. Once it begins to boil, cook for 5 minutes. Immediately remove from heat and pour out boiling water then run cold water over the egg until it is cool enough to handle. Peel the egg, slice, and add on top of the avocado. This method will produce a perfect soft boiled egg. The yolk will be ever so slightly soft without being runny.
