What’s For Dinner? – Woodchuck Sandwich

1 (5)If you Google “Woodchuck Sandwich” and look at images, you will see a plethora of photos that look nothing alike.  It would almost seem that any sandwich could have the label Woodchuck.As a child, our family’s big meal of the day on Sundays was at lunch when we came from church.  Fried Chicken, or Pot Roast were two of our Sunday favorites.  But having had a big meal at the noon hour, we typically had a smaller or lighter meal at dinner time, sometimes soup and a sandwich of some kind.  One of our family favorites was what my mother called a Woodchuck.  I have no idea why my mother called this delicious open faced sandwich a Woodchuck and she doesn’t seem to remember where the name came from either.  But we didn’t care, and my guess is neither will you, once you bite into this absolutely delicious sandwich.  My mother served these on toasted English muffins, but any kind of toasted bread is just fine.

It is not so much a recipe as a method of assembly and toasting.  The portions will depend on how hungry you, and those you are serving are, and whether you are paring this with a small salad or a cup of soup.  Tomato Bisque is ALWAYS a good idea 🙂 A yummy comfort food sandwich for supper? Oh yes THAT is abundant living 🙂

Woodchucks

For each sandwich half you will need:

English muffin or bread of your choice buttered and toasted
2 slices of cooked thick cut bacon
slices of tomato
avocado slices, optional
slices or sharp cheddar cheese
salt and pepper to taste

Toast bread in a 350 degree oven just until it is beginning to brown.  Add cheese, then tomato slices, avocado if using, then bacon, broken into pieces to fit the bread, then slices of cheese to top it all.  Bake in a 350 degree oven until cheese is melted and bubbling.  DELICIOUS….oh I can taste it now!

    Thank you so much for sharing the Woodchucks. I used to visit my aunt when I was a child and she would make them for us. Yummy!
