Vanilla – 1-2-3

11 - 1That is how simple this ice cream is to make…as the song goes “as easy as 1-2-3”!  On Wednesday we gave you an easy and delicious coffee ice cream recipe along with the promise, that today, we would give you an equally easy vanilla ice cream recipe and method.  And this one doesn’t even require an ice cream maker!  So now there is really no reason on earth not to enjoy some cold and creamy, delicious, homemade ice cream 🙂

It is the little things like this that make life feel so full and so abundant.  So stay cool and enjoy!

Simple Vanilla Ice Cream

(This recipe makes 3 pints of ice cream)

1 pint of heavy cream
1 can sweetened condensed milk
1 Tablespoon vanilla
1 cup half and half (optional)*
11 - 1 (3)   11 - 1 (2)
Whip the cream into stiff peaks.  Stir the sweetened condensed milk, vanilla, and half and half if using,  into the whipped cream.
Fill containers and store in the freezer until firm, about 6 hours or overnight.  Eat and remember one of the great joys of summer:-)

* The original recipe for this did not include the half and half.  We found it a bit too rich and almost butter tasting so we have added the half and half to lighten the texture slightly.
