The Cookie Jar – Double Chocolate Cookies


What could possibly be better than a double chocolate cookie?  Why, double the ways to eat it, of course:)This is a very simple cookie to make, and delicious all by itself.  But the recipe makes a lot of them so when you want something extra from your cookie making efforts, these are the cookies that can deliver.

Double Chocolate Cookies

1 cup butter
2 cups brown sugar
½ cup cocoa
1 egg
2 tablespoons heavy cream
1 tablespoon vanilla
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 chocolate bar chopped into chunks or 1 bag chocolate chips

Cream butter and sugar.  Add cocoa and mix again.  Mix in egg, vanilla and cream and mix until well blended.  Add in flour, salt and baking soda and beat 1 minute.  Stir in chocolate chunks or chips.

Scoop dough with small ice cream scoop or roll into small balls and place on cookie sheet.  Flatten balls with your fingers and bake at 350 degrees for 8-10 minutes.

Allow cookies to rest on the cookie sheet for 1 minute before you remove them to a wire rack to cool.

Once the cookies are made and cooled you are ready to enjoy them as is, or to use them to make another wonderful holiday treat.  You are going to need 2 cookies and some peppermint ice cream…


…(or any flavor you fancy) to make ice cream sandwiches.  (If you can’t find peppermint ice cream, soften some good quality vanilla ice cream and stir in some crushed peppermint candies.  Put enhanced ice cream back in the freezer for 30-45 minutes to firm it up before proceeding to make ice cream sandwiches.)

Bake the cookies for 8 minutes if you prefer a softer cookie and 10 minutes if you like a crunchier cookie or if you are using the cookies to make ice cream sandwiches as the ice cream will soften the cookie a bit as it sits.

Simply soften the ice cream by leaving it out at room temperature for about 5 minutes.  Spoon some of the ice cream unto a cookie keeping it mounded towards the middle.
 
Add another cookie on top and lightly press with your hand to distribute the ice cream from the middle to the edges.


If you happen to have some peppermint candies on hand


you can crush some in a ziplock bag using a rolling pin and break the candies into pieces.


Roll the edges of the ice cream sandwiches in the crushed peppermint candies for added pizzazz.


Wrap in waxed paper or plastic wrap and refreeze for about 15-20 minutes.  Whether you keep them just as individual cookies or use them to make ice cream sandwiches they are satisfying and delicious.  These are easy,  pretty and very festive.
