Sweet Work – Key Lime Pie

A picture is worth a thousand words….if you like Key Lime Pie you’ll love this recipe.  It is quite simply the best!
One of my favorite cookbooks, The Best Recipe from Cooks Illustrated, has my favorite recipe for Key Lime Pie.

Because my family likes it piled high, I double the recipe and make it in a springform pan.  Whether you decide to use it the way I’m giving it to you (doubled) or halving it and making it in a pie plate instead of a springform pan, the flavor is sweet and tart and creamy and rich and …well….simply delicious!

KEY LIME PIE

Graham cracker crust:
2 1/2 cups of graham cracker crumbs
1/2 cup sugar
10 Tablespoons of melted butter

Lime Filling:
2 Tablespoons of grated lime zest
1 cup lime juice from approximately 8 limes
8 large egg yolks
2 14oz. cans sweetened condensed milk

Whipped cream topping:
1 pint heavy cream
1/2 cup confectioners sugar
1 teaspoon vanilla
Additional lime zest for topping

Preheat oven to 325 degrees.

Whisk egg yolks and lime zest in a bowl for about 2 minutes until yolks look light green.


Add in sweetened condensed milk and then lime juice and beat together.


Set aside to thicken at room temperature while you make the crust.


Mix graham cracker crumbs and sugar, then add butter.

Stir until well blended.

Pour into a 9 inch springform pan and press crumbs in the bottom and up the sides of the springform pan.  Bake until lightly browned about 15 minutes.  Then cool to room temperature for about 20 minutes.

Pour filing into crust.

Bake until center is set but still jiggly, approximately 30* minutes.  Remove from oven and cool to room temperature, then place in refrigerator for at least 3 hours or up to overnight. ( *Only bake for 15 – 17 minutes if you are making half the recipe.)

Whip cream, adding sugar a little at a time.  When soft peaks form, add vanilla and continue beating cream until it is stiff.  (But watch carefully so as not to whip cream too stiff and turn it to butter.)  Add whipped cream to top of lime filling and then garnish with lime zest.  Refrigerate until ready to serve.
