Sunshine On A Plate – Flourless Orange Cake

Hi:

Since I have gotten some wonderful recipes from Chums I thought I would contribute one. You may already have this but I found it recently in Canadian Living magazine. I am always on the lookout for really tasty, easy recipes. This one fits the bill perfectly. It is very moist and delicious.  The recipe says it makes 10 servings at 235 calories per. I tend to cut the pieces smaller for less calories.

ORANGE ALMOND FLOURLESS SNACKING CAKE

6 eggs separated
1 cup granulated sugar
2 tsp orange zest
1 tablespoon vanilla
Pinch cinnamon
2 cups ground almonds (almond flour)*
2 tbsp orange juice
2 tsp icing sugar

Pre heat oven 350°. Grease 9-inch spring form pan, line bottom with parchment paper.

In large bowl, using hand mixer beat together egg yolks, sugar, orange zest, vanilla and cinnamon until butter-colored and thick enough to form long ribbons that hold their shape for 2 seconds when beaters are lifted – about 5 minutes. Fold in almond flour and orange juice.

In separate bowl, beat egg whites until stiff peaks form. Stir one quarter into egg yolk mixture until combined. Fold in remaining egg whites until combined. Scrape into prepared pan.

Bake in 350° oven until cake pulls away from the side of pan and top is golden and firm to the touch – about 35 minutes. Run knife around edge, let cool in pan on rack for 10 minutes.

Transfer cake to rack and cool completely. Dust with icing sugar. (Can be stored on airtight container for up to 5 days.)

* (Trader Joes carries Almond Meal which is the same thing as almond flour.  If you prefer, you can always grind almonds to a fine texture in your food processor.  Just watch carefully so as not to allow the nuts to turn to almond butter.)

PS: Flourless cakes tend to sink a bit in the middle. Not a problem, it does not affect the taste. The icing will dissolve as it stands on the cake so dust just before serving. Although it will keep up to 5 days, it never lasts that long in my house

    Hi Robin,
    I have had this cake and it is indeed yummy! In fact, someone brought it (or something very similar) to the Jesp’s Oscar party and served it with dairy-free coconut based “So Delicious” instead of ice cream.
    I thought you would like to change the spelling of diary to dairy so that when readers look up “dairy free” the right recipes come up. There were 3 category typos if you look back at tags. Also, Sheila came up Sheilia on the second time. An easy fix!
    I have to say I love it when these come through my email. Maybe they are all the more treasured because they show up unexpectedly in my mailbox! LOL

      In fact, this particular chum is Sheilia with lia at the end. Different spelling but the right one for her. Love to you.
