Strawberry Meringue

When a friend passed out this recipe many, many years ago, we did not realize what a journey it would take.  Its presentation is quite beautiful and people rave about how it tastes.  We have used and used and used it and, every time we do, we realize, once again, that it is a very easy, amazingly pleasing dessert.  We have offered it on countless dessert bars, as the finishing morsel at elegant dinner parties, as a wonderful companion to a good cup of tea and, on many occasions, as a birthday cake.

The meringue is best baked the night before you want to serve it, and then left in the oven (having not opened the oven door), overnight.  It has NEVER failed us and we feel sure that it will never fail you.  Enjoy!

Ingredients

1 heaping cup of white sugar
4 egg whites
2 large boxes of strawberries, cut up, leaving ONE strawberry for garnish
1 quart of whipping cream
¼ cup white sugar
1 teaspoon vanilla
How To

Preheat oven to 275 degrees.
Grease pie plate
Beat 4 egg whites until stiff (make sure they are stiff)
Add sugar slowly
Keep beating until well mixed

Put mixture in pie plate and pop in oven
Leave oven on for about 1-1/2 hours
Look in glass of door to make sure meringue has risen.  If the meringue has not risen, leave in another 1/2 hour then turn off oven.
LEAVE IN OVEN OVERNIGHT WITHOUT OPENING THE DOOR

The next day, before serving:

Add ¼ cup sugar to cut up strawberries (they will be a bit juicy)
Whip cream
Whip in the vanilla to the cream but do not over whip
Add strawberries and sugar to cream

Place mixture in meringue shell, pop the pretty strawberry on top, et, voilà!

    I love this! It’s also great with lemon curd and fresh fruit arranged on top or passion fruit pulp and whip cream. I could eat the whole thing myself! 🙂 Love the site! THANKS!

      Yes, this can be done with any fruit you choose. We just tend to make it with strawberries most of the time but it is delicious with pineapple and cherries or any kind of berries, for that matter.

        Annie I know Goya makes a passion fruit pulp that is in the freezer section. IF you know about Super King market in Altadena you can most certainly find it there.
