Rise and Shine – A Breakfast Cookie

fullsizerender-44Who wouldn’t love the idea of cookies and milk (or coffee) for breakfast.  But it just sounds way too unhealthy right?  Not anymore!  We have a recipe for a healthy and yummy breakfast cookie that will have your kids (or you) happy to take time for breakfast.

fullsizerender-58These are simple to make and easy to grab on the go even if you’re running late.  You can make them up the night before and have breakfast ready in a snap.  Or have them as a healthy afternoon snack.  These will quickly become a favorite we are pretty sure of it:-)

Peanut Butter Banana Oatmeal Breakfast Cookies
(adapted from a Food Network recipe)

That recipe name pretty much sums up what is in these tasty treats 🙂

3 ripe bananas
1 cup peanut butter ( you could also use almond butter or sunflower seed butter0
1/4 cup honey
2 1/2 cups rolled oats
1/2 teaspoon salt
2 teaspoons cinnamon
1/3 – 1/2 cup chocolate chips
1/2 cup almonds or pecans (optional)

Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
Mash the bananas with a fork in a large bowl. Add the oats, peanut butter, honey, cinnamon and salt, and stir until just combined. (The mixture may be thick and hard to stir.)  Add in chocolate chips and the nuts if using them.
Scoop out the dough with a small ice-cream or cookie scoop, and form balls with your hands, pressing the dough together very tightly. Place the balls on the prepared baking sheet and flatten slightly.  Bake until the edges start to brown, 10 to 12 minutes.

Cool on a wire rack and then serve with ice cold milk.  It’s gonna be a good good day! 🙂
