Apple Fritters

Besides the pumpkin, the other iconic food of Fall would have to be the apple.  Nearly everyone likes them and we all know they keep the doctor away.

Technically speaking, a fritter by definition should be fried.  These are baked.  But once you taste them we don’t think you’ll mind one bit!  These little gems will not only give you another yummy and delicious way to get your apple today, they will make you the new best friend of everyone you share them with too!  Seriously, you HAVE to try these!

Baked Apple Fritters

1/4 cup of lightly packed brown sugar
1/4 cup of white sugar
2 apples, peeled and cored and cut into small bite sized chunks
1 1/2 cups of all-purpose flour
2 tsp baking powder
1/2 tsp sea salt
1 tsp nutmeg
6 Tablespoons of cold butter, cut into small pieces
1 egg
1/4 cup of milk

Glaze:
1/2 cup of butter, melted
1/2 cup of sugar
2 tsp cinnamon

Preheat your oven to 350 degrees. Whisk the flour, baking powder, sugars, salt and nutmeg in a bowl. Add the cold chopped butter.  In your food processor (or with a fork or pastry blender) cut in the pieces of butter with the flour mixture until it resembles coarse crumbs.

In another bowl, beat the egg with the milk and fold in the chopped apples. Add the egg mixture to the flour mixture. Stir using a spatula or wooden spoon making sure not to overmix.

Place a spoonful of dough into each mold of a buttered mini muffin pan*, or just directly on a butter baking sheet.

Bake for 15 minutes or until the donuts are just golden. Remove from the oven and unmold.  Drop each donut into the melted butter and then into a bowl with the sugar and cinnamon mixed together.  Serve immediately.  YUM!

* We used a cake pop pan because we wanted to get the rounded shape but using a muffin pan or dropping spoonfuls directly on a baking pan works just as well.

(If you can’t serve them right away keep them warm on a baking sheet in a 200 degree oven for a few minutes until you are ready to serve.)
