The Soup

It’s the dead of summer and it’s hot outside….day and night.  So why, you may be asking yourself, are we doing a post about soup?  The answer is simple.  It isn’t just about soup.  It’s about THE SOUP!  As everyone is hitting the beach or the swimming pool to get some relief from the heat, we all seem to be a little more aware of our shape (or in some cases, the lack of shape that seems to have occurred).  That’s where this soup…THE SOUP…can be of help.

This is a very old recipe that has been around for decades, and is attributed to helping you shed some unwanted “water weight” and consequently, pounds to give you a shape you are happy about.  The main ingredients that trigger the loss of that extra water weight are cabbage, onions and celery.  The rest of the veggies included are there primarily for flavor, so feel free to add others or eliminate any in this list you don’t like.  This is a tasty and healthful vegetable soup.


1 head of green cabbage chopped or shredded
1 large or 2 small onions, chopped
3-5 stems of celery (leaves included), chopped
1-2 cups peppers, chopped
1-2 cups chopped or shredded carrots
1 can diced tomatoes
3-4 tomatillos, chopped
1 bunch cilantro, chopped
2 cloves of garlic, minced
1 tablespoon oregano
1 teaspoon cumin or thyme
2 teaspoons salt
1 teaspoon black pepper
Water to cover veggies

Add all the chopped or shredded veggies and herbs along with the salt and pepper, to a soup pot.  Add water, enough to cover.  Bring to a boil, then turn the heat down and simmer  the soup for about 15 minutes or up to 1 hour.  Refrigerate and heat servings as you need them.  This soup keeps well, and tastes yummy to the last drop.

Replace your lunch and/or dinner with the soup for 5-7 days.  Eat lightly at your other meals and you will be in great shape in no time!
