Simple Summer Supper – Salmon Salad

IMG_5938We couldn’t resist the title of today’s post….it was just too fun to use alliteration here.  But what is more fun, is eating this yummy salad!  Everyone seems to want lighter food when the weather is hot.  Salad is an obvious choice.  This one is perfect because it is simple, easy to make, healthy, and delicious.  You can check all the boxes with this one, so eat up and enjoy!

Salmon Salad

4 salmon fillets
8-10 cups greens
8 small pickled beets, cut into quarters
8-10 ripe figs, halved
1/2 cup walnuts
1/2 cups dried cranberries (or raisins)
6-8 green onions, chopped
4 oz. goat cheese
Vinaigrette dressing
Honey

Vinaigrette Dressing
1/4 cup apple cider vinegar
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup sunflower oil

Saute salmon in a couple of tablespoons of olive oil or butter, or a combo of the two.  Lightly sprinkle fish with salt.  Cook skin side first until crispy.  Turn fish and cook just until firm.

While fish is cooking combine greens and beets, figs, cranberries, walnuts, onions and goat cheese.  Make vinaigrette and toss with salad.  Divide salad on four plates and drizzle lightly with honey.  Top each salad with warm salmon filet.  Bon Appetite !
