Salad Days – Breakfast Gone Green

Eggs on Spinach We could all use more greens in our diet, right?  Why wait for lunch or dinner?  A “green” breakfast can be delicious!Everywhere we turn it seems we are hearing about the need for incorporating more dark green leafy vegetables  in what we eat. They are full of nutrition no doubt so I figured why only eat them at lunch or dinner.  Spinach omelets  have their place on nearly every breakfast menu in places that serve breakfast  but otherwise, we don’t really think about eating greens in the morning….at least I don’t.  Until the other day. Breakfast is my favorite meal and though I love to try new things, for my money, you really can’t beat bacon and eggs…especially if  you throw in some crispy hash browns 🙂  I was about to make this breakfast for my self a few days ago when I spotted some baby spinach that wan’t used in the salad from the night before and thought “Why not?”  So instead of eating my eggs and bacon by themselves I went with another plan.  I put a big handful of baby spinach on my plate as a sort of “bed” for my eggs.  Then I fried a couple pieces of thick cut bacon.  Took them out to drain on some paper towels while I cut up some left over baked potatoes, and sauted them until they were crispy.  Took those out, and fried two fresh eggs sunny side up. The eggs went on top of the spinach, I sprinkled the crispy potatoes all around and added the strips of bacon and voila!  I had  very delicious breakfast “salad”….It was Breakfast Gone Green 🙂 Runny egg Besides being really tasty, I figure it can only lead to more abundant and healthy living….How do you incorporate veggies into your breakfast?

P.S. You can drizzle a tablespoon of apple cider vinegar over this to give it an added kick and all the health benefits of apple cider vinegar too.  Also I could just as easily used kale which is enjoying enormous popularity right now but that isn’t what I had in the refrigerator.  Still it would be worth trying it next time 🙂
