Why pumpkin in a breakfast smoothy? Here’s why…

Not what you might expect for breakfast, but delicious and nutritious just the same.  Pumpkins are very high in beta-carotene. Beta-carotene is an antioxident that converts into Vitamin A, which is important to maintain a healthy body.  Researchers believe that eating a diet rich in beta-carotene may reduce the risk of heart disease as well as some cancers. They also believe it helps to delay aging.

Pumpkin is an often-overlooked source of fiber, but with three grams per one-cup serving and only 49 calories, it can keep you feeling full for longer on fewer calories.  A fiber-rich diet seems to help people eat less, and thereby shed pounds.

This is all interesting info, but the real reason for this suggested use of pumpkin is simply that it tastes really good!  Give this a try.  We think you’ll be glad you did.  A good breakfast leads to a life full of love, joy and abundance 🙂

Pumpkin Breakfast Smoothy
Serves 2

2 frozen bananas
1/2 cup of pumpkin puree
1 tsp Pumpkin Spice
1/2 tsp cinnamon
1 tsp vanilla
2 cups vanilla Greek yogurt
Freshly grated nutmeg

Place all the ingredients except the nutmeg in a blender and mix just until smooth.  Pour into glasses and sprinkle with freshly grated nutmeg.  DELICIOUS!!
