Mardi Gras Love At First Bite


Today is Mardi Gras. Tomorrow is Valentine’s Day!  We have something yummy for you to make in a snap whether you are indulging today and giving up chocolate for Lent tomorrow, or celebrating tomorrow on the “day of love”.  Today is a good day to make these sweet treats. Give some to those you love.  They will surely return the love once they get a bite of these!  These yummy goodies are called “Cookie Dough Bites”.  Though they are not really chocolate chip cookie dough, and contain no raw flour or raw eggs, they taste remarkably like cookie dough wrapped in chocolate.  You can certainly celebrate with these and will be in LOVE AT FIRST BITE!!  🙂

Cookie Dough Bites

1 1/2 cups butter
1 1/2 cups brown sugar
1 tablespoon vanilla
1 whole package of graham crackers, crushed to fine crumbs
1 teaspoon salt
1/3 cup whole milk
12 oz bag mini chocolate chips
2 bags chocolate chips
1 tablespoon coconut oil
chocolate sprinkles

Cream butter and sugar until light and fluffy. Add vanilla and beat again.  To the butter sugar mixture, add the graham cracker crumbs, salt and milk, and mix thoroughly.  Using a small spoon or a very small scoop, make balls of “dough”. Freeze these cookie dough balls for at least 2 hours or overnight.  When they are frozen, melt 2 bags of chocolate chips and add coconut oil.  Dip each bite into the chocolate and turn to coat. Using a fork shake off excess chocolate and place on parchment paper on a baking sheet.  Finish with chocolate sprinkles.  Allow the chocolate to set up or if you are in a hurry place them in the refrigerator for 20 minutes.
