Lemony Blueberry Sorbet

If you love lemon, or blueberries, or both…you’re in for a treat today! Or if you are avoiding dairy, have a lactose allergy, or just want a simple, refreshing, and satisfying treat, you are going to love this 3 ingredient Lemon Blueberry Sorbet.  Serve it with Lemon Butter Cookies if you want to even kick it up a notch 🙂  Having a yummy treat that is so simple to make and delicious to eat…makes summer living very abundant indeed!

 

 

 

Lemony Blueberry Sorbet
1 cup freshly squeezed lemon juice
1 1/3 cup sugar
2 bags (12 oz. each) frozen blueberries or 3 cups fresh blueberries

Place lemon juice and sugar in a blender or food processor and blend for 2-3 minutes to allow sugar to dissolve in the juice.  Add frozen berries and process until berries are fully incorporated and mixture is thickened from frozen berries.  Spoon into one pint paper ice cream cartons or into a 4 cup glass or metal bowl that has a cover.  Freeze for two hours to allow the sorbet to fully set up.  If you are using fresh blueberries allow 6 hours for the sorbet to become firm enough to scoop.
