Fresh Mint Chocolate Chip Ice Cream
(Makes 3 pints)

3 cups half and half
2 cups heavy cream
1 1/2 cups sugar
1 cup packed fresh mint leaves
4 oz. chopped dark chocolate

Pour into a sauce pan 3 cups half and half,  with 1/1/2 cups sugar and mint leaves.  Simmer until bubbles form around the edge of the pan.  Turn off the heat and allow the half and half, sugar, mint mixture to sit until it is cool, about 1 hour.  Add cream and refrigerate until chilled.  Remove mint leaves and add chopped chocolate to mixture.  Process according to your ice cream makers directions.

Place finished ice cream into cartons and then into your freezer to allow the ice cream to freeze until very firm about 2 hours.

You can order these ice cream cartons here.  Besides using these cartons for ice cream, you can also use them for storing soup or sauces or potato salad  or rice salad.
