Encore- Watermelon Salad

watermelon-salad-e1370402860498On Thursday we gave you a post that encouraged you to eat more watermelon, so we thought it only right to give you this Watermelon Salad as today’s Encore post.Since we first did this post a couple of years ago we have added one slight change.  If the watermelon isn’t quite as sweet as you wish it was, (in other words it didn’t have a “bee sting”), we sometimes drizzle the salad with a dressing made of a bit of lime juice (1/4 cup), honey (1/4 cup) and a dash of salt whisked together.  Either way, with or without the dressing, this is a delicious and refreshing salad in the those dog days of summer 🙂

Summer is coming and it is hard to beat the cool refreshing taste of watermelon…especially in this easy and delicious salad. This is maybe the easiest…and one of the tastiest …salads you can make. Perfect, especially when paired with grilled meats, but really great on it’s own as well. The crunchy, sweet watermelon combined with the creamy, salty feta and the aromatic mint makes this a delightful and satisfying salad you can enjoy all summer long. Share it with those you love and you’ll surely have joy that is bound to lead to more abundant living 🙂

Watermelon Salad

Cut watermelon into chuncks. Cut feta into little squares. I personally prefer Danish feta because it is particularly creamy, but you can use any kind of feta that you like. Pick the leaves off several stems of mint and roll them together until they resemble something similar to a tiny cigar. Cut the roll into thin strips, (these are called chiffonades of mint). Just before you are ready to serve the salad combine the watermelon and feta and sprinkle with mint….

Alternatively you can serve this slightly differently as an appetizer. It is perfect at a BBQ or when you are grilling your main course out doors. Cut the watermelon into square chunks, add a couple of mint leaves and top with a little piece feta and arrange on a platter like this photo I found on theitgirlproject.com.
