Company Cake

Our dear chum Janna, posted a wonderful recipe on Facebook and I just had to share it with all of you.  I grew up eating this cake as my grandmother loved to make a version of it too!My grandmother, Nanner, (who happened to be a pastor’s wife ) used to make this cake whenever company was coming which was quite often.  She liked to add a cup of coconut to it as well, and sometimes she substituted a can of fruit cocktail for the pineapple.  It is quick, easy and very tasty whether you are having company or not!

Company Cake
(aka in my home Fruit Cocktail Cake)
2 cups sugar
2 cups flour
2 tsp. baking soda
2 tsp. vanilla
2 eggs
1/2 cup chopped pecans, optional
1 20 oz. can crushed pineapple or fruit cocktail

Put everything in a bowl and mix well.  Pour into a 9×13″ buttered pan. Bake at 350 degrees for about 35-45 minutes.  Cool and dust with powdered sugar or frost with Cream Cheese Frosting and cut into squares.

Cream Cheese Frosting

8 oz. cream cheese
1 stick salted butter
2-3 cups powdered sugar
1 tablespoon vanilla
Heavy cream as needed

Beat room temperature cream cheese and butter until soft and creamy.  Add vanilla and sugar and beat until the sugar is well incorporated.  Add heavy cream as needed to make frosting a nice spreading consistency.

Now invite some company over for a nice long visit and enjoy!

      Yes Leah…it does. You know your cakes!!! It is similar especially if you add the coconut, but this doesn’t have the banana in it that Hummingbird Cake does. It is moist and easy to make and quick to make. As a child I remember my grandmother making it regularly and everyone always loved it 🙂
