As Easy As Pie – Brandied Apple Pie

brandied apple pieEver wonder where that saying came from?  According to Wikipedia: “As easy as pie” is a popular colloquial idiom which is used to describe a task or experience as pleasurable and simple. The idiom does not refer to the making of a pie, but rather to the act of consuming a pie (“as easy as eating a pie”) which is usually a simple and pleasurable experience.Brandied Apple Pie is indeed pleasurable and simple to eat….and not really difficult to make either.  Try it this holiday season.  I think you’ll agree 🙂

Brandies Apple Pie

This delicious pie has apple baked in a custard flavored with brandy.  Serve it with a dollop of whipped cream and you won’t be sorry!

Preheat oven to 375 degrees.

1 recipe for pie crust dough
2 apples peeled and chopped
1/2 cup sugar
1/2 cup brandy
2 eggs
1 cup heavy cream
1 tablespoon flour
a dash of nutmeg
a pinch of salt

Roll out the pie crust and arrange it in your pie pan.  Place apples in a sauce pan with 1/4 cup sugar and 1/4 cup brandy.  Bring to a boil, then simmer apples on a low flame for about 5 minutes.  Meanwhile beat eggs and add 1/4 cup brandy, 1/4 cup sugar, the pinch of salt and dash of nutmeg, the tablespoon of flour and the cream.  Stir to combine.

Stir in apples to cream and pour the whole mixture into the unbaked pie crust.  Bake in a 375 degree oven for about 40 minutes or until filing appears to be nearly set.  Remove fro oven and cool completely.  Can be refrigerated before serving.  Add whipped cream and….ENJOY!

Thanks for the question Joyce. You caught a mistake for me. The answer is 1/2 cup sugar total. there is 1/4 cup added to the apples as you simmer them with the brandy and 1/4 sugar added to the cream mixture so it is 1/2 cup in total. I made the correction on the post. Thanks for asking and i hope your family enjoys this one 🙂
