Ah ha – Thanksgiving = Cranberries

The pilgrims were introduced to the cranberry by the Native Americans and, oh, what a great introduction that was!

Just about at this time of year, we start thinking about cranberries and the deliciousness they will be adding to our table.  Tart, scarlet cranberries are grown in sandy bogs in the northern United States and northern Europe. They’re available from October through December. Cranberries are rich in Vitamin C and can be found only during those months.

No matter how they’re used, cranberries add a welcome sweet and tart note to cold-weather dishes such as brisket or Thanksgiving turkey. Baked goods are richly enhanced by cranberries.

The produce section of your grocery store will have cranberries displayed in their splendor of color during their season.  When you get them home, keep them in the original bag for up to two weeks in the refrigerator.  They can be frozen and kept for up to one year.  To prepare these delicious little things, rinse and discard any discolored or soft berries; if frozen, there’s no need to thaw before use.   The recipe that you find on the bag is actually a really great one for cranberries, adding whatever else seems yummy to you.

    So here is a yummy fresh cranberry relish:
    2 apples – core but leave the skin on. Use firm apples that keep their texture – Braeburn, Macintosh, Granny Smith)
    2 oranges – use peel but remove some of the white pithy stuff if there is a lot. Cut off the ends
    16 oz. bag of fresh cranberries – frozen
    1 cup of pecans chopped fine or ground
    Put frozen cranberries in food processor and chop until fine, dump into bowl. Then chop the apples apples and oranges and add them to the bowl. Add nuts and sugar to taste. I have used about 1 cup of sugar. Some like it sweeter. Refrigerate to blend flavors. Yummy and fresh tasting. Since lots of cranberries come now in 12 oz bags, I have made this with one bag and one apple and one orange and it is a bit more cranberry flavored which I like. 🙂
