A Little Bite Is Just Right

Bite-TopSometimes, after a big lunch or dinner you don’t need or even want a big dessert.  Sometimes, it is just a little bite of something (preferably a chocolate something) that is just right 🙂

That is exactly what we have for you today.  Two yummy examples of “just a bite” of something sweet, chocolatey, and delicious.  One is our version of the classic candy, Almond Joy.  The other is our take on the classic After Dinner Mint.  Both a little bite that is just right and full of love, joy and an abundance of goodness 🙂

Two Chums Almond Joys

These tasty morsels simply couldn’t be any easier to make 🙂

14 oz bag shredded or flaked coconut
1 lb. dark or milk chocolate (your preference)
blanched whole almonds

Place almonds evenly spaced on a cookie sheet.  Melt chocolate over a very low flame until smooth.  Stir in coconut.  Drop by spoonfuls over almonds.  Allow to sit at room temperature for about 2 hours to set or, for faster set up, place in the refrigerator for about 30-45 minutes.  Bring out your favorite candy dish and load it up.  Store the remainder of the candy in an air tight container in the refrigerator.

After Dinner Mint

Again simplicity is key with this classic sweet bite.

Semi sweet chocolate morsels
Fresh mint leaves

Rinse and thoroughly dry each individual mint leaf.  Melt chocolate over a low flame until smooth.  Holding the stem, drag each mint leaf carefully through the melted chocolate.  Check to be sure the whole top of the leaf is covered in chocolate.  Repeat for as many leaves as you need/want.

Place on a plate to set up.  This usually takes about 1 hour.  Place mint  chocolate leaves in the refrigerator until you are ready to serve them.  They are sweet, chocolatey and the mint makes them so very refreshing!

Chocolate covered mint leaves…they are fresh and sweet!  For a twist, try making them with white chocolate or drizzling some white chocolate over the dark chocolate once it has fully set up.

    These sound great. Dip things in chocolate. Dole has a new dessert/snack which is frozen slices of banana dipped in dark chocolate. Also easy to make are chocolate dipped strawberries. Remember chocolate fondue? I am getting old.
